Can the defrost timer also be too blame? I use probe taped to the fermenter but I get higher temps from time to time. I though it was from the $100 refrigerator not being able to keep up, but now I think it may be the defrost timer. I switch out frozen 2-liter bottles twice a day to try to conterract this.

Fermenter a lager at 44°-50°, is there going to be a build up of ice in the freezer section if you bypass the defrost timer?

Is there a better solution? I could make it a dedicated refrigerator by cutting out most of the divider between the freezer and refrigerator sections so that the whole unit is at one temperature controlled by the external thermostat ( and bypass the defrost timer).

If you take apart the controll area of your fridge you will find the thermostat with cut in and cut out adjustments. if you increase the cut out you will be able to get lower temps before it shuts off. If you decrease the cut in it will turn on at a colder temperature which means it turns on more frequently.
