Safale K-97

Tue Dec 30, 2008 3:37 am

I was reading Northern Brewer's description of K-97 and it sounded similar to Wyeast 1007. I wanted to make an Altbier and give this strain a go, but I wanted to check the ranks and see what results anyone has had with K-97. Also, is this yeast repackaged? Any worries about contamination during that process?

I made the BCS Alt last year with K-97 and it turned out great, pretty dry, but very good drinking.

Also did a separate portion with Nottingham which was more 'earthy' but equally good.

Used the K-97 and haven't had issues with it. Used most of the Safale yeast with good results (not sure of the repackaging???)

I have an alt fermenting away with k-97 (2 weeks at 64, bumping up a degree a day now until I hit 69 to make sure finishes out by next weekend).

Getting some nice bready aromas off the fermenter. I will put some updates when I bottle and lager it. Was a little slower taking off than other dry yeasts I have used- no kruesen for about 18-24 hrs, never got much more than about 1" thick.

I am also brewing an Alt. It is sitting at about 66-67 degrees. I had about 3/4 inch kruesen at best. It did take off after about 16 hours (as usual when I use dry yeast). It was very good when I racked it. I can't wait to keg it.

keep the K-97 at reasonably low temperatures for an Alt.. go too high and it starts to throw banana and bubblegum.

It was for a while the "recommended" dry yeast for wheat beers - and at high enough temps it kinda works. So if you dont want that, just be careful of your temps and ester production.

If it has Safale printed on it, its not repackaged. Plain silver foil... might well be.
