How Long Do I Leave the Bugs??

Thu Aug 28, 2008 5:20 am

So, I had a Belgian Strong Golden that didn't completely ferment out and ended up sweet. Decided to uncarb the keg, warm it up, and added the brett from the bottom of a bottle of Avery 15. (thanks dresselbrew!)

How long should I let this sit?

Prost.

From what I understand Brett attenuates more completely, and unfortunately, more slowly than Saccro. Could be at least 6 months.

Better be patient. After 3 or 4 months taste it once a month. Once it get to the degree of sourness you want, chill it down and drink it within a couple weeks.

By the way, I found the title to this thread a little misleading. I was all prepared to answer "Until you are ready to eat them." :P
