Good point, I hadn't thought through that adding any fruit, even one that is tart, would bring some fructose into the mead.

Add some acidity using an acid blend. Sample first, then scale up for the entire batch.

Oak will toss in some tannins as well which may change the perception.

Using tartaric acid or something else?
