I was listening to a pod cast today. where it was posed what other questions do you want or think we should ask brewers when doing something like can you brew it?
I would like to know what level of filteration do they use, what kind of filter and at what temp?(.5-1-5-7 micron?) What kinda co2 volume they project to have. How many days cold dropout before filtering and carbonating, and packaging? How many days usually from brew day to the day the beer goes out the door?PH during the process?etc, etc, etc,

All of your questions are good, however I do not think it is going to change the flavor of the beer all that much. The idea of the show is to get the "recipe" down. The process, although important is not going to be the same because you are taking a commercial beer on a larger system and then making that recipe on a homebrew system.

FYI, understand that these recipes should be springboards for your imagination to make your beers different. Yes, making cloned beers can be fun, however, make your own beers! Making beer is similar to drawing and painting. Copying a painting will teach you a lot about the art, but you really will not be able to expand your talents until you have developed your own twist.

Enjoy your masterpieces!

Try the recipes. You won't make a perfect clone, like Tasty or JZ would. You will make a good beer, and that's what it's really all about. That and :unicornrainbow:
