I just thought of another question about this process. Say I'm doing hop additions at 30 minutes and when I hit 15 minutes and turn off the heat to add the other half of my extracts, since the wort is still close to boiling won't the 10-15 minutes or so it takes to stir in the extract and bring it to a boil make it more like a 45 minute hop addition, thus taking away some essential oils from the 30 minute addition and actually adding more bittering?

I have incorporated late extract addition on all my batches and i have noticed a much cleaner taste. The biggest change/improvement i have seen has actually been since i exclusively switched from Liquid to Dry extract.

Question though, if i am switching from 3 gallon boil to full wort boil is there any value to still doing a late additions?

follow up question, also from a Minneapolis brewer: would late extract users recomend putting in the DME first, then for only 30 the liquid? My next recipe will use both DME and liquid. Just wondering if anyone has done this.

Funny timing. I just read an article in BYO for this month about this. In the article called something like Brewing for your Equipment, it mentions this. I saw most of the reipies in there that use both in them using the DME at almost 60 min, then the LME as late as 15 min. I guess the point there was that you only need to sanitise the LME, but the DME needs more time to get into solution.
I have done both and am not trained enough to taste the diff. I'd go with the try it and see how you like it thing.

Awesome! I'll try this. My main concern here is appearance. I brewed a Belgian Witbier (Northern Brewer Kit) and it came out deep amber. Not a nice straw color. I think that spending too much time on my burner is cooking the LME. I'll brew it tonight!

I made my hefe full boil with all DME and I did half for 60 mins half at 15 mins. It came out tasting great and had a nice color, but I can't compare to any other hefe doing all of it for 60 mins for it was my first. I don't plan on testing it since it came out great.

Holy crap, my beer is beautiful! I just transfered my late extract addition from the primary fermenter (a bucket) into a carboy to hang out for awhile. It is the lightest colored beer I have ever made, yet it is the exact same recipe I did a few months back that came out dark. Yeah, so the late extract addition trick really works well...thanks everyone!
