Forgot roasted barley

Mon Dec 11, 2006 5:08 pm

I am on a tight schedule to brew in the next 24 hrs, unfortunately the recipe I was going to make (Murphy's Clone from Clone Brews) requires roated barley and my home brew store is out. I don't have another store. The 7oz roasted barley is a specialty grain in the extract recipe. I have all the other ingrediants plu 1 lb of flaked wheat.

Can i roast the wheat and get a good enough result to drink.

does not have to clone Murphy's anymore, just need a good beer.

I believe that Roasted Barley is un-malted and contributes little to the OG of the wort. You could sub in some Black Barley if available or add some Black Patent/Aromatic blend to keep the color and complexity close. Neither will impart the "coffee" flavor that Roast Barley would, but you could maybe add some fresh brewed (cooled) coffee to the fermenter also. You could also chalk on up for being more prepared the next time and brew it as is. Let us know what route you take.

I recently tried to do a guinness clone and ran into the same situation as you. I picked up all the ingredients and on brew day I realized that I forgot the roasted barley. I did have the U.S. Black and the flaked barley. I didn't know what I was doing and tried to do a mini-mash for the flaked barley, but with out the roasted barley it won't convert the starches to sugar.

I'm told that the result is some unwanted starch in the wort. The beer came out very thin tasting and not that great. I ended up dry hopping in the keg to try to 'fix' the beer. I worked out ok, not great, but ok. It's very drinkable now, but not even close to a Guinness.

If the flaked wheat is the same as flaked barley (needs to be mashed) I think you would be better off not using it in this batch.
